SWEET POTATO CASSEROLE | |
2 1/2 lb. (about 4 c.) sweet potatoes, cooked and mashed 1/3 c. butter, melted 2 eggs, beaten 1/2 c. sugar 1 tsp. vanilla 1/2 c. milk Combine all above. Spread into a greased 1 1/2 quart casserole. TOPPING: 1/2 c. chopped nuts 1/2 c. packed brown sugar 3 tbsp. melted butter Combine all and sprinkle over potatoes. Bake for 25 minutes or until heated through. Serves 6 to 8. 1/2 cup shredded coconut may be added, if desired. |
