BUSCH GARDENS SWISS CHEESE SOUP 
1 tbsp. butter
2 oz. flour
21 oz. milk
10 oz. chicken stock (can of chicken broth will do)
8 oz. processed cheese food
8 oz. Swiss cheese, shredded
Salt & white pepper
10 oz. sauterne wine
Kirschwasser

Melt butter in sauce pan and slowly add flour to make a roux. Add milk and chicken stock, stirring constantly. Bring to boil and let simmer 15 minutes. Stir in cheese food and Swiss cheese. Stir constantly, simmer for 5 minutes. Add salt and pepper and correct seasoning.

Just before serving, add sauterne wine and simmer 1 minute. After dishing out in cups, put a small dash of Kirschwasser on top of each serving. Makes 2 quarts.
