PASTA SALAD 
1 lb. pasta (rotini or twists preferred)
1/4 c. mayonnaise
1 red bell pepper, cubed
1 sm. cucumber, sliced and quartered
1 sm. onion, chopped
Salt and freshly ground black pepper

Cook pasta according to package directions, but remove from heat while still firm. Drain and rinse in cold water. Place in large bowl and add remaining ingredients. Mix well and add more mayonnaise until desired coating is reached. Chill 2 hours before serving.

Other fresh vegetables can be added, such as broccoli flowerets, green peppers, and carrot cubes. This goes well with barbecued chicken--it's a great alternative to a garden salad. Serves 4-6.
