THE ULTIMATE CHOCOLATE SWIRL
CHEESECAKE
 
2 1/2 lb. cream cheese
1 3/4 c. sugar
2 tsp. grated orange peel
1/4 tsp. vanilla
5 eggs
2 egg yolks
1/4 c. heavy cream
3 tbsp. flour
12 oz. semi-sweet chips
1/2 c. heavy cream, whipped
Cheese curls; optional

Blend cream cheese, sugar, orange peel, and vanilla. Beat in eggs and egg yolks one at a time. Beat in cream and flour. Divide mixture in half.

Melt chocolate. Stir melted chocolate into 1/2 filling. Pour into crust. Pour other half over top and swirl chocolate batter through plain batter to marbelize.

Bake at 500 degrees for 10 minutes, then reduce to 250 degrees and bake 1 hour more. Cool 2 hours. Refrigerate 3 hours or more. Garnish with whipped cream and cheese curls.

CRUST:

1 c. flour
1/4 c. sugar
1 tsp. grated lemon peel
1/4 tsp. vanilla
1/4 tsp. chocolate liqueur or Kahlua
1 egg yolk
1/4 c. butter

Combine first 5 ingredients. Add egg yolks and butter. Press half in bottom of pan and bake. Cool. Put unbaked dough on sides of pan.
