OLD-FASHIONED MOLASSES CAKE | |
1 1/2 c. sifted all-purpose flour 1 1/2 tsp. baking soda 1/2 tsp. cinnamon 1/2 tsp. ginger 1/4 tsp. cloves 1/4 tsp. salt 1 egg, beaten 1/2 c. butter, melted 1 c. molasses 1/2 c. hot water Preheat oven to 375 degrees. Grease a square 9x9 inch baking pan. Sift flour, soda, spices and salt; set aside. In large bowl with electric mixer, beat egg, butter, molasses and water until combined. Add flour mixture and beat until smooth. Pour in, bake 30 to 35 minutes or until toothpick inserted in center, comes out clean. Cool partially in pan on rack. Cut in squares and serve while warm. This recipe was often used by my grandmother, Lula (Blake) Blackwell. There was no sugar in the cupboard for baking other type cakes. |
