OVEN-FRIED CHICKEN 
4 boneless, skinless chicken breasts, pounded to 1/4" thickness
3 c. corn flakes cereal, crushed
3 tbsp. Dijon mustard
1/4 c. milk
Cooking oil

Mix mustard and milk together. Dip chicken breast in mustard mixture, then roll in corn flakes until completely coated. Place coated chicken in shallow baking dish that has been coated with cooking spray. Sprinkle each chicken breast with 1/4 teaspoon of oil. Bake in oven at 400 degrees, approximately 20-25 minutes or until chicken is done.
