ARROZ CON POLLO 
2 c. rice (not instant)
2 c. cooked chicken, cut in 1 inch strips
1 med. onion, chopped
1 green pepper
1 sliced tomato
1/2 sliced red onion
1/2 c. peas
1/2 c. carrots
1 sm. box raisins
1 c. Coca Cola or Pepsi
Garlic powder
Cumin
Salt and pepper
Oil
Butter

1. Boil chicken with chopped onions, 1/2 green pepper, 1 tablespoon garlic powder, 1/2 tablespoon cumin, 1 teaspoon salt, and pepper or poultry seasoning (if desired). Boil slowly until chicken is cooked. Reserve broth for cooking rice.

2. Fry red onion, 1/2 green pepper, tomato with 2 tablespoons oil or butter. When braised, add raisins, peas, carrots, and chicken. Cook 2 to 3 minutes on low heat.

3. Mix rice with 3 cups chicken broth and Coca Cola. Cook until rice is done.

4. Mix ingredients in Steps 2 and 3. Add 2 tablespoons oil, 1 tablespoon butter; add pepper to taste. Cook 30 minutes on low heat. Makes 4 servings.
