OATMEAL PANCAKES 
1 1/2 c. reg. oats, uncooked
1/2 c. whole wheat flour
1 tsp. baking soda
1/8 tsp. salt
2 tsp. sugar
2 c. nonfat buttermilk
1/2 c. egg substitute
1 tsp. vanilla extract
Vegetable cooking spray
Apple Topping

Combine first 5 ingredients in a medium bowl. Add buttermilk, egg substitute and vanilla; stir well. Coat a nonstick skillet with cooking spray; place over medium heat until hot. For each pancake pour 2 tablespoons batter into hot skillet. Turn pancakes when tops are covered with bubbles and edges look cooked. Serve warm with Apple Topping. Yield: 26 pancakes (38 calories each).

APPLE TOPPING:

2 c. unsweetened applesauce
1 1/2 tbsp. brown sugar
1/4 tsp. apple pie spice
1/4 tsp. maple flavoring

Combine all ingredients in a small saucepan. Cook until hot and bubbly, stirring occasionally. Yield: 2 cups (9 calories per tablespoon).
