CRANBERRY CHUTNEY 
1 lb. cranberries (1 pkg. plus 1 c.)
1 c. granulated sugar (or less to taste)
1/2 c. packed brown sugar
1/2 c. raisins
2 tsp. cinnamon
1 1/2 tsp. ground ginger
1/4 tsp. ground cloves
1/4 tsp. ground allspice
1 c. water
1 c. chopped, cored, pared, cooking apples
1 tbsp. butter
1 c. chopped onion
1/2 c. chopped celery

Simmer cranberries, apples, sugars, raisins, spices and 1 cup water uncovered in a 4 quart saucepan over medium heat, stirring frequently, until juice is released from berries. This take about 15 minutes.

Meanwhile, gently cook onion and celery in butter until tender. Add onion mixture and simmer uncovered until thickened, stirring frequently. This take about 40 minutes. Refrigerate covered up to 2 weeks.
