1 lb. pecans
1 egg white
1/4 tsp. vanilla
1 c. sugar
1 tsp. cinnamon

Beat egg white until frothy. Add vanilla. Pour over nuts and mix with hands. Mix sugar and cinnamon together. Pour over nuts and mix with hands. Spread on buttered cookie sheet.

Bake 1 hour at 250°F, turning every 15 minutes.
