COLOMBO DE POULE 
1 chicken (2 kg.)
2 tbsp. oil
100 g. Colombo powder
Scallions or onions
Parsley, thyme, garlic, allspice, lemon, pepper, cloves, vinegar
1 kg. potatoes (for 8 people)

Cut the chicken into pieces. Mix well with the lemon and season with salt, garlic, vinegar, allspice and pepper. Sprinkle the pieces of chicken with Colombo powder. Cook, simmer slowly without water so that the meat makes its own juice. Garnish chicken with remaining ingredients and when chicken begins to show color and become somewhat dry, gradually add small quantities of water and Colombo powder. Allow to cook for 1 hour, adding water if necessary. Add a little of the Colombo powder to a little oil and pour over the chicken. Allow to cook gently before adding to the potatoes, cut into quarters. Cook for about 30 minutes; season with lemon juice and crushed garlic.
