MINCEMEAT 
7 lb. meat (1/2 beef, 1/2 pork), may also use venison
1/2 bushel apples
1 box seedless raisins
1 box seeded raisins
2 boxes currants
5 lb. sugar
2 qt. canned or frozen cherries (add sugar for frozen)
1 1/2 qt. cider
1/2 c. vinegar
1 1/2 tbsp. black pepper
1 1/2 tbsp. salt
1 1/2 tbsp. cinnamon
1 1/2 tsp. ground cloves
Add tart jelly, if desired

Cook meat until tender. Cool. Remove fat, bones and grind. Grind cored, unpeeled apples. Mix everything together well. Simmer until everything is thoroughly cooked. Baking in a modern oven works well. May be canned or frozen. Use in pies, cookies or any recipe calling for mincemeat.
