FAYE'S RAISIN - NUT COOKIES | |
2 c. seedless raisins 1 tsp. baking soda 2 c. sugar 1/4 tsp. nutmeg 3 eggs, beaten 4 c. flour 1 tsp. baking powder 1 c. water 1 c. shortening 1-1 1/2 tsp. cinnamon 1/4 tsp. allspice 1 tsp. vanilla (or more) 2 tsp. salt 1 c. chopped nuts Boil raisins with water for 5 minutes. Drain and measure 1/2 cup of liquid (add water if needed to make 1/2 cup). Cool mixture. Beat eggs in one at a time to mixture of raisin water. Sift flour, salt and baking powder into mixture and mix thoroughly. Add raisins and nuts. Chill dough until stiff. Drop by fat teaspoons on ungreased baking sheet. Bake at 400 degrees for about 12 minutes (larger ones at 375 degrees for 15 minutes). Makes about 6 dozen. |
