APRICOT WALNUT MUFFINS 
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 c. sugar
1/2 c. finely chopped dried apricots
1/2 c. finely chopped walnuts
1 egg
1 c. milk
1/4 c. salad oil

Sift together flour, baking powder, salt, cinnamon and sugar. Stir in apricots and nuts. Mix together egg, milk and oil and stir in just until mixed. Fill greased muffin cups 2/3 full. Bake at 425 degrees. Test with toothpick. Serve warm with butter.
