GLAZED CARROTS 
2 tbsp. chopped onions
1 tbsp. chopped fresh parsley
2 tbsp. butter
3 med. carrots, cut into 1 1/2-inch sticks
1 can beef consomme
Dash of ground nutmeg

Saute onions and parsley in melted butter for 5 minutes. Add remaining ingredients. Cover and cook on medium heat for 25 minutes. Uncover and simmer 20 minutes more until glazed.
