MULTI-GRAIN SCONES 
1 egg
1/2 c. of sugar
5 tbsp. expeller-pressed oil (Canola)
1/8 tsp. lemon zest
1/2 c. of old fashioned oats
1/4 c. wheat bran
1 1/2 c. unbleached all-purpose flour
2 tbsp. millet
1/2 tsp. cinnamon
1 tbsp. baking powder
1/2 c. milk
1 c. nuts or dried fruit

Preheat oven to 350.

In a small bowl, whisk together oil, sugar, eggs, and set aside. In a large bowl, mix lemon and all dry ingredients. Stir with a wooden spoon. Slowly add egg mixture to dry ingredients, creating a thick mixture. Add milk and mix well. Lightly grease baking sheet, drop spoonfuls of dough onto pan.

Bake 8-10 minutes, until crust is golden. Cool for 10 minutes.
