LEMON SPONGE PIE 
1 fresh lemon
1 c. sugar
3 eggs
1 c. milk
3 tbsp. flour
1/2-3/4 tsp. salt
1 (8") unbaked pie shell

Separate eggs. Beat egg yolks, flour, salt, sugar and milk together. Add juice of 1 lemon. Fold in well beaten egg white (stiff). Pour in unbaked pie shell and bake 30-40 minutes at 350 degrees.
