SAUTEED OKRA
1 lb. fresh okra
6 tbsp. butter
3 tbsp. milk
1/2 c. bread crumbs
1 clove garlic, minced (optional)
Salt & pepper to taste

Wash okra thoroughly, then cut off stems. Now blanch the pods by submerging them in a pot of rapidly boiling water for 1 or 2 minutes, or until light green but still crisp. Drain them and pat dry. Brown 1/2 cup bread crumbs in butter in a large skillet over medium heat. Add garlic if you like and the milk. Slice the okra crosswise into 1" pieces and add to skillet. Saute, stirring frequently, for 5 minutes or until they are nice and brown and tender. Season with salt and pepper and serve.
