TRUFFLES 
1/4 c. heavy cream
6 tbsp. butter
8 oz. sweet baking chocolate or 4 oz. sweet & 4 oz. semi-sweet
2 tbsp. orange liqueur or coffee liqueur or 3/4 - 1 tsp. vanilla, mint or orange extract
Unsweetened cocoa or finely chopped nuts

Simmer cream and butter. Remove from heat. Add chocolate. Add liqueur or extract. Put in bowl and chill until firm. Make 1 inch balls. Roll in cocoa or nuts. Refrigerate. Freezes well. Stand 10-20 minutes at room temperature prior to serving.
