FILO DELIGHTS 
1 (12 oz.) pkg. filo pastry
1/2 lb. butter, melted
various fillings (see below)

Place pastry between 2 dry dish towels and cover with a barely damp dish towel. Take 2 sheets of pastry at a time and place 1 on top of the other. Cut pastry into 6 pieces across the width. Brush each piece of pastry with a little butter.

Place 1 tsp. of selected filling in left-hand corner of pastry piece. Fold other corner of pastry up to cover filling to form a large triangle. Fold left-hand corner up to form a smaller triangle. Continue folding in corners to make a neat package of the filling. Brush with melted butter. Repeat with remaining pastry and filling.

Place on baking tray. Bake at 400°F for 15-20 minutes until golden brown. Serve hot.

Note: Filo Delights can be filled in advance. Layer uncooked triangles between sheets of plastic wrap and freeze for up to 2 weeks. Place frozen into hot oven to cook and brown.

Makes approximately 50 delights.

Seafood Filling:

1/4 cup cottage cheese
1 (8 oz.) can crabmeat, drained
2 green onions, chopped
salt and pepper, to taste

Spinach Cheese Filling:

4 oz. spinach, shredded and cooked
1 small onion, chopped
1 oz. feta cheese, crumbled
1/2 tsp. lemon juice
pepper, to taste

Chili Pepper Meat Filling:

1/4 lb. cooked ground beef
1 tbsp. chili pepper sauce or to taste
1 small onion, chopped

Cream Cheese Filling:

4 oz. cream cheese, softened
2 green onions, chopped
salt and pepper, to taste

To prepare the fillings, combine ingredients, adjusting seasonings as necessary.
