MEL'S GUACAMOLE | |
2 soft avocados 1 Roma (paste) tomato, diced 1/2 sweet red onion, diced juice from 1/2 of a lime cilantro, to taste 2 cloves garlic, finely chopped 1 jalapeno, diced (optional) salt and pepper, to taste Halve avocados, remove the pits and spoon out filling into a serving bowl.(To easily remove pits, use a sharp knife and "slap" it into the pit, tilt the knife to the side and the pit will pop right out.) I like my guacamole chunky, so I use 2 spoons to chop the avocado. Add tomatoes, onion, cilantro, garlic and jalapeno stirring to mix slightly. Squeeze fresh lime juice over the top, sprinkle with salt and pepper, then stir to desired consistency. Enjoy! This is a huge hit where ever I take it! One more hint, to keep the avocados from turning brown, push the pits down in the guacamole. Submitted by: Melanie Winder |
