HOLLANDAISE SAUCE 
1/3 c. butter
1-2 tbsp. lemon juice
2 egg yolks
1/4 tsp. salt
1/4 tsp. dry mustard
Dash Tabasco sauce

Place butter in 1 quart casserole. Heat in microwave oven on Full Power for 40 to 60 seconds, or until melted. Stir in remaining ingredients. Beat with spoon or whisk until well mixed. Cook in microwave oven on Full Power for 1 to 1 1/2 minutes or until thickened. Stir halfway through cooking time. Yield: 1/2 cup. May be served over vegetables or Eggs Benedict.

Since microwave ovens vary in power, you may need to adjust your cooking time.
