JAPANESE FRUIT CAKE 
1 c. shortening
2 c. sugar
3 c. self rising flour
4 eggs
1 c. sweet milk
1 tsp. vanilla flavoring
1 tsp. cinnamon
1 tsp. allspice
1/2 tsp. cloves
1/2 c. raisins
1 c. chopped nuts

Make as any other cake. Divide the batter into two parts. Two white layers and two dark layers. Add spices, nuts and raisins to make dark layers. Cook layers on 350 degrees for 30 minutes.

FILLING:

2 sm. apples, grated
7 oranges
2 c. sugar
Juice of two lemons
2 packs coconut
4 tbsp. cornstarch

Add the juices and sugar together, let this come to a boil, add cornstarch with 1/2 cup cold water. Continue to cook stirring constantly until the mixture thickens, add coconut and spread on cake.
