SOUR CREAM RHUBARB PIE 
3 tbsp. flour
1 1/4 c. sugar
1 c. sour cream
3 c. rhubarb (diced)
1/2 tsp. salt
1 beaten egg
1 tsp. vanilla

TOPPING:

1/3 c. sugar
1/3 c. flour
Pinch of salt
1 tsp. cinnamon
1/4 c. soft butter

Sift together flour, salt, and sugar. Add egg, sour cream, and vanilla. Mix well, add rhubarb and mix well. Pour in unbaked pie shell. Bake in a 400 degree oven for 15 minutes. Reduce to 350 degree oven for 25 minutes. Add topping; mix until its like corn meal. Sprinkle over pie. Bake for 15 minutes or until brown.
