GREAT EASTERN'S PERFECT
SPAGHETTI SAUCE
 
8 oz. mussel meats
1/4 c. olive oil
3 sm. cloves garlic, minced
1 tbsp. chopped parsley
Grated Parmesan or Romano cheese
1/2 tsp. oregano
1 c. chopped canned tomatoes
Spaghetti
Salt and pepper to taste

Heat oil in saucepan; add spices, saute garlic until tender. Pour in tomatoes. Cover and simmer until thickened, about 25 minutes. Add mussel meats and season with salt and pepper. Cook spaghetti and toss with 2 tablespoons olive oil to prevent sticking. Spoon sauce over hot pasta and sprinkle with cheese.

Serves 2-4.
