POTATO PUFF EXTRAORDINAIRE 
4 c. hot mashed potatoes
1 (8 oz.) pkg. cream cheese
1/3 c. chopped onion
1/4 c. chopped pimento or green olives
1 egg, beaten
1 tsp. salt
Dash of pepper

Combine potatoes and softened cream cheese, mixing until well blended. Add remaining ingredients, mix well. Spoon into 1 1/2 quart casserole. Bake at 350 degrees for 40 minutes. Serve immediately. 6 to 8 servings.
