MOLDED LIME/CHEESE-PINEAPPLE-NUT
SALAD
 
6 oz. lime Jello
2 c. boiling water
3/4 c. cottage cheese, drained
1/2 c. cream cheese (softened)
1/2 c. walnuts
1/2 c. chopped celery
3/4 c. crushed pineapple, drained
1/2 c. mayonnaise
2 tbsp. fresh lemon juice

Dissolve Jello in 2 cups boiling water. Add 1 cup pineapple juice, 1/2 cup cold water. Place in refrigerator until Jello is at the consistency of beaten egg whites.

Mix soft cream cheese, cottage cheese, mayonnaise and lemon juice together. Fold in Jello. Chill overnight. Yield: 12 servings.
