GERMAN APPLE PANCAKES 
1 c. sifted flour
1 c. milk
2 tbsp. melted butter
1/2 tsp. baking powder
5 eggs
2 thinly sliced apples, peeled

Mix dry ingredients, stir in milk. Add eggs, one at a time, beating well. Add melted butter. In cast iron frying pan, melt 2 tablespoons butter. Add 1/4 cup sugar and 1 teaspoon cinnamon. Stir to mix and add sliced apples.

Pour batter over apples in the hot fry pan. Bake in 425 degree oven for 20-25 minutes. Turn over onto plate and sprinkle with confectioners' sugar. Delicious for Sunday brunch of even dessert. I pour maple syrup over mine.
