ZUCCHINI BROWNIES 
1/3 c. safflower oil
1 c. packed brown sugar

Cream until fluffy.

1 egg
1 1/2 tsp. vanilla

Add to creamed sugar and BEAT thoroughly.

1 c. sifted flour
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. baking powder
1/4 tsp. salt (optional)

Stir into egg mixture; blend well.

1 c. shredded zucchini
1 c. chopped walnuts

Add to batter and blend thoroughly.

Pour into greased 8 x 8 x 2 inch pan or 12 x 7 1/2 inch oblong pan (preferred). Bake at 350 degrees for 25-35 minutes. Cool completely. Cut into brownie bars.

Makes approximately 20-24.
