CAULIFLOWER AU GRATIN 
4 c. cut up cauliflower
4 tsp. butter
2 cloves minced garlic
2 tbsp. flour
1/2 tsp. salt
Dash cayenne pepper
2 c. evaporated skim milk
1 c. (4 oz.) shredded lowfat Sharp Cheddar cheese
1 c. cooked and drained corn
2 tbsp. chopped parsley

Preheat oven to 350 degrees. In steamer or microwave cook cauliflower until tender; set aside. In large sauce pan melt butter, add garlic, lightly saute for 1 minute. Stir in flour, salt and cayenne. Gradually add milk, stirring constantly until sauce boils and thickens. Stir in 3/4 of the cheese, all of the corn and parsley. Arrange cauliflower in shallow baking dish. Cover with sauce and sprinkle remaining cheese on top. Bake until top is lightly browned and bubbling about 30 minutes. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
