CHOCOLATE CHIP MUFFINS | |
1 cup self-rising flour 1/4 cup sugar 1 egg, beaten 1/2 cup milk 1/4 cup vegetable oil 1/2 tsp. vanilla extract 1/4 cup semi-sweet chocolate mini chips 1/4 cup chopped walnuts sifted confectioners' sugar, for dusting Preheat oven to 400°F. Grease and flour 1 1/2-inch muffin pans. Combine flour and sugar in a mixing bowl. Make a well in center and add egg, milk, oil and vanilla. Mix in just until moistened. Stir in chocolate chips and nuts. Pour into prepared muffin pans, filling about 2/3 full. Bake at 400°F for 12 to 14 minutes until edges are lightly browned. Remove from pan and sift confectioners' sugar on top of each muffin. Makes 12 muffins. Submitted by: D. Harrington |
