GARLIC LEMON CHICKEN 
2 lb. boneless chicken parts
1/4 c. olive oil
Juice of 1 lemon
12 cloves garlic, peeled & chopped
2 tbsp. fresh oregano or 1 tsp. dried
Salt & pepper to taste
2 tbsp. fresh, chopped Italian parsley

Remove skin from chicken, if desired. Brush chicken with oil and place in an oven-proof casserole. Pour lemon juice over chicken. Sprinkle with garlic, oregano, salt and pepper. Bake, covered, in 350 degree oven for 20 minutes. Turn pieces and cook, uncovered, 20 minutes longer. Reduce pan juices, if desired. Sprinkle with parsley. Makes 6 servings.
