CREAMY RICE PUDDING 
3 c. milk
3/4 c. uncooked rice
3 egg yolks
3/4 c. sugar
3 c. half & half
1 tsp. vanilla
Cinnamon

1. Place milk in heavy saucepan, bring to boil. Stir in rice, lower heat and cover. Allow to cook about 40 minutes until rice is tender and milk is absorbed.

2. In a bowl, beat egg yolks, sugar, half & half and vanilla.

3. Add egg-cream mixture to the rice. Stir constantly until mixture thickens. This takes about 15-20 minutes.

4. Pour in dish and sprinkle with cinnamon.

5. Cool and serve. Makes 8 servings.
