COCONUT MACAROONS 
2 egg whites
Dash salt
1/4 tsp. vanilla
1/2 tsp. almond extract
2/3 c. granulated sugar
1 1/3 c. flaked coconut

Preheat oven to 325 degrees. Grease cookie sheets. In bowl beat egg whites with salt, vanilla and almond extract on high speed, adding sugar gradually until stiff peaks are formed, about 3 minutes. Fold in coconut. Drop by teaspoons onto prepared cookie sheets. Bake at 325 degrees for 20 minutes. Remove from cookie sheet and cool on brown paper or paper toweling. Yield: 3 dozen.
