GINGERBREAD 
1/2 c. boiling water
1/2 c. butter or shortening
1/2 c. molasses
1/2 c. packed brown sugar
1 egg, slightly beaten
1 1/2 c. flour
1/3 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. ginger
1/2 tsp. cinnamon
1/2 tsp. allspice

Pour boiling water over butter. When butter melts, add molasses, brown sugar, and egg. Put in rest and beat until smooth. Use 8 or 9 inch pan. Bake at 350 degrees for 30 to 40 minutes until cake springs back when touched.

BROIL ON COCONUT TOPPING:

1/3 c. packed brown sugar
1 tbsp. soft butter
1 tbsp. maple syrup
1 tbsp. cream
3/4 c. flaked coconut

Combine all and spread on warm baked 8 or 9 inch gingerbread cake. Place 4 inches under broiler and broil 1 to 2 minutes until coconut is golden brown. Serve warm.
