HAM AND POTATO CASSEROLE 
6 med. potatoes, mashed
1 1/2 c. ham
1 lg. onion, chopped
1/2 c. of ricotta cheese
1 c. of milk
2 tbsp. of butter
1 tsp. pepper
1 tbsp. Parmesan cheese

Layer half the potatoes, ham, onions, pepper and cheese. Repeat layers. Pour milk over potatoes, add butter (cut into pats), salt and pepper. Sprinkle on Parmesan cheese. Bake at 350 degrees for 30 minutes or until the potatoes are steamy. If casserole gets too dry, add more milk. Serves 4.
