WASHINGTON APPLE CAKE 
3 eggs
1 1/2 c. sugar
1 c. vegetable oil
2 c. all-purpose flour
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 c. chopped walnuts
4 c. thinly sliced apples

In a large bowl, beat eggs until light and thick. Combine sugar and oil; add to eggs. Stir together flour, cinnamon, soda, and salt. Add to egg mixture. Add vanilla; stir in walnuts.

Spread apples in buttered 13x9x2 pan. Pour batter over apples, spreading to cover. Bake at 350 degrees for 1 hour; cool. Spread with cream cheese icing.

CREAM CHEESE ICING:

2 (3 oz.) pkgs. cream cheese

Beat until fluffy; add 1/4 cup melted butter, 1 3/4 cups powdered sugar, 1 teaspoon lemon juice. Spread over cooled cake.
