ARTICHOKE PATTIES 
1 10 oz can artichokes
2 eggs
1 to 2 cups flour
kosher salt
Parmesan cheese (opt)

Mix everything just enough so it holds together but is still chunky and the flour does not over-power. Fry in a tablespoon or so of olive oil in a non-stick skillet (add more oil as needed).

Turn to brown on each side.

Serve hot, sprinkle with Parmesan cheese, (optional), and kosher salt.
