DELICIOUS BAKED APRICOTS 
4 (17 oz.) cans apricot halves, drained
1 1/2 c. butter, melted
1 c. firmly packed light brown sugar
1 c. firmly packed dark brown sugar
1 (16 oz.) pkg. Ritz crackers, crushed
Whipped cream or vanilla ice cream (optional)

Place half of apricots and half of butter in a 13x9x3 inch pan. Combine sugars and sprinkle half over apricots. Cover with 1/2 of cracker crumbs. Layer remaining apricots and sugar in pan.

Combine remaining cracker crumbs and butter. Sprinkle over top. Bake at 300 degrees for 50-60 minutes. Serve warm. Top with whipped cream or ice cream, if desired. Yields 12 servings.
