HOMINY CASSEROLE 
2 cans hominy
1 can chopped green chilies
1/4 c. chopped onion
4-5 slices bacon, diced
1 sm. container sour cream
Grated Cheddar cheese

Fry bacon. Add onion and saute with bacon. Add chilies. For crunchy hominy drain hominy and add to above. For softer hominy, don't drain and add to above; then cook down until liquid is almost gone. Stir in sour cream. Pour in casserole dish and cover with grated Cheddar cheese. Bake at 350 degrees until heated through and bubbly.
