TOMATO QUICHE 
9 inch pie shell
2 lg. tomatoes
Flour, salt coating
Cooking oil
2 tsp. chives
1 slice Swiss cheese
2 eggs
1 c. cream
1 c. grated Cheddar cheese

Bake pie shell at 425 degrees for 8 to 10 minutes. Cut 2 large tomatoes into 6 pieces each, dip in flour and season with salt. Saute quickly in cooking oil. Place 2 tablespoons chives or green onions on bottom of shell; add 1 slice Swiss cheese (slice in thin strips). Put tomato on top of this. Mix 2 slightly beaten eggs and 1 cup heavy cream. Grate one cup Cheddar cheese; sprinkle over tomatoes in shell. Pour egg mixture over all. Bake 40 minutes in 375 degree oven. Cool 5 minutes.
