WHOLE WHEAT WAFFLES 
2 c. whole wheat flour (stir before measuring)
2 tsp. baking powder
3/4 tsp. salt
1/2 tsp. ground cinnamon
1/8 tsp. ground ginger
1/8 tsp. ground nutmeg
1/8 tsp. ground cloves
3 eggs, separated
1 1/2 c. milk
1/4 c. melted shortening

Combine flour, baking powder, salt and seasonings; stir to mix. Beat egg whites; set aside. Beat egg yolks, add milk and shortening. Add all at once to flour mixture and beat until dry ingredients are moistened.

Fold in egg whites, leaving little fluffs of them showing in batter. Pour into preheated waffle iron; bake until steaming stops or signal light indicates waffle is baked. Serve hot with butter and syrup, honey or applebutter. Makes 6 (7 inch) waffles.
