PEPPERMINT PINWHEELS 
1 cup (2 sticks) butter, softened
1 cup packed brown sugar
1/2 tsp. baking soda
1 tsp. vanilla extract
1 tsp. salt
2 eggs
1 tsp. peppermint extract
3 cups all-purpose flour
1/2 tsp. red or green food coloring

In a large mixing bowl, combine all ingredients except food coloring. Divide dough evenly into halves; add food coloring to one half of dough, refrigerate for one hour.

Take the plain dough and roll on a lightly floured surface into a 16x9-inch rectangle. Do the same with the color dough; then lay it over the plain dough. Roll them and wrap tightly in wax paper. Refrigerate at least 4 hours.

Preheat oven to 400°F. Slice refrigerated dough about 1/4-inch thick and place on ungreased cookie sheet. Bake at 400°F for 8 to 10 minutes or until golden brown.
