TOMATO AND EGG SCRAMBLES | |
1 garlic clove, minced 2 tbsp. olive oil or marg. 3 tomatoes, peeled and chopped Salt and pepper to taste 6 eggs, beaten Saute garlic in oil or butter. Stir in tomatoes and seasonings. Simmer about 6 minutes. Stir in eggs. Cook until eggs are softly set, stirring gently but constantly. Serve hot. Yield; 4 servings. |
