BAKED CAULIFLOWER 
1 head cauliflower, broken into flowerettes
1 1/2 c. canned tomatoes
1/2 c. chopped onions
1/2 tsp. oregano
1/2 tsp. salt
1/8 tsp. pepper
3/4 c. grated cheese
3/4 c. coarse cracker crumbs

Cook cauliflower 20 minutes or until just tender in greased 2 quart casserole. Drain tomatoes and onions, oregano, salt, and pepper. Cover with cauliflower. Mix cheese and bread crumbs; spread over cauliflower. Bake in 400 degree oven for 20 minutes. Serves 6.
