OATMEAL COOKIES 
1 c. shortening (1/3 lard, 2/3 butter)
3/4 c. brown sugar
3/4 c. white sugar
1 egg
1 tsp. baking soda, dissolved in 1 1/2 tsp. warm water
2 c. quick oatmeal
1 1/2 c. flour
1 c. butterscotch chips or
1 c. chocolate chips or
1 c. raisins or
1 c. salted Spanish peanuts

Cream shortening, sugars, egg and soda. Add flour and oatmeal. Add the chips or whatever you want in them and bake.
