ZUCCHINI QUICHE 
1 (9 inch) pie shell, partially baked
1 tbsp. oil
2 med. zucchini, sliced
1 med. onion, sliced
1 tbsp. onion soup mix
2 tsp. dried dill weed
5 eggs
8 oz. Mozzarella cheese, grated

Preheat oven to 375 degrees. Saute zucchini and onion in oil until soft. Meanwhile, beat eggs until fluffy. Mix together the zucchini, onion, eggs and onion soup. Add dill. Pour into pie shell. Sprinkle cheese on top. Bake for 35-40 minutes until cheese is bubbly.
