MEAT POTATO QUICHE 
3 tbsp. vegetable oil
3 c. coarsely shredded raw potato
1 c. grated cheddar cheese
3/4 c. ham
1/4 c. chopped onion
1 c. milk
2 eggs
1/4 to 1/2 tsp. salt, according to taste
1/8 tsp. pepper
1 tbsp. parsley flakes

Preheat oven to 425 degrees. In 9 inch pie pan, stir together oil and potatoes. Press evenly into pie crust shape. Bake at 425 degrees for 15 minutes until just beginning to brown. Remove from oven. Layer on cheese, ham, onion. In a bowl, beat together: milk, eggs, salt and pepper. Pour egg mixture onto other ingredients. Sprinkle with parsley. Return to oven and bake at 425 degrees about 45 minutes or until lightly browned, and knife inserted 1 inch from edge comes out clean. Cool 5 minutes before cutting into wedges.
