PUMPKIN ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 tsp. pumpkin spice

Beat eggs on high for 5 minutes. Beat in sugar. Stir in pumpkin and lemon juice. Stir in all dry ingredients. Spread on greased and floured pan (15 x 10 x 1).

Bake on 375°F for 15 minutes. When finished baking, flip over onto a kitchen towel that has been sprinkled with powdered sugar. Roll up in towel and let cool.

Icing:

1 c. powdered sugar
6 oz. cream cheese
1/4 c. softened butter
1/2 tsp. vanilla

Mix all ingredients until smooth. Once bread is cooled, unroll and spread filling, then roll up again and chill.
