MACARONI CASSEROLE 
1 lb. macaroni, cooked
1 lb. cheese, grated
1 c. mushroom soup
1 sm. can mushrooms and juice
1 c. mayonnaise
1/2 c. chopped onions
1/4 c. chopped pimento
1/4 c. chopped bell pepper
Ritz crackers
2 or 3 oz. crumbled Bleu cheese
3 tbsp. melted butter

Mix soup, mushrooms, mayonnaise, onions, peppers, and pimento thoroughly. Pour over drained macaroni and mix well. Stir grated cheeses into macaroni mixture and place in baking dish. Melt butter slowly and mix with crushed Ritz crackers and sprinkle over top of casserole. Bake at 375 degrees for 30 minutes. (Freezes well.)
